Spring Roll Wrappers
INGREDIENTS
1 cup bread flour
1 egg, beaten
1 tablespoon cold water
DIRECTIONS
Sift bread flour into a medium bowl and make a well in the center. Place egg and cold water in well. Beat with a wooden spoon until a smooth dough has formed. Use more water as necessary. Knead until elastic and pliable. Cover and chill in the refrigerator 4 hours, or overnight.
On a lightly floured surface, roll the dough into an approximately 14×14 inch square. Cut into 12 equal squares. Roll each square into a very thin 6×6 inch square. Refrigerate until use.
Traditionally they are made with rice flour.
The brand I buy is called “Leasa” wonton wrappers. It’s really a fresh pasta, and I always find it in the produce section, where the Asian veggies are.
If you’re making spring rolls, I reckon they’re called rice paper. If you’re making egg rolls, they’re called egg roll wrappers.
