What would you like to see in a bakery?

I’m plotting on opening a bakery in a few years from now after I go to college. What are some baked goods you want to see to grab and go or sit down and eat that are available right there? What are some baked goods you’d like to see on a menu you could order for special occasions? Also, with stuff like cookies and stuff, how many varieties should there be available daily?

      I like this crossant like pastry and it has custard in the middle and crust around the it.

      Have your regular cookies always available but have specialty ones coinciding with the seasons and make them the best so every year at that time people are just waiting for them.

      I like fresh danishes.

      But it is always nice when you can find really excellent bread at a bakery.

      To stand out from others have some specialty items like french pastries or things you just don’t see on an everyday bakery in America. Something to get people talking.

      I want to have doughnuts, cookies(all kinds), bignes, bagels, croissaints, muffins, and all the other typicals. Place all the sandwiches on a menu to buy. Place down cakes or cookie pizzas( a cookie in the shape and style of a pizza). For cookie varieties probably oatmeal raisin, chocolate chip, peanut butter, snickerdoodle, sugar, white chocolate, macadamia nut, other odd combos would be excellent.

      Assorted bagels, with lox & cream cheese available.
      Fresh croissants, with a variety of flavored butters and jams, and maybe even meats and excellent cheeses..
      You never see enough variety of hard rolls and wonderful ethnic breads…
      Fruit danishes, and all flavors of turnovers–I’d suggest a rotating daily special. Cookies, at least 6 varieties, with at least 2 that are standard–say choc chip and maybe sugar.

      Offer party-packs of cookies and donuts,–where I live, that’s the standasd birthday/well done treat at work. Offer a excellent discount price for these, and people will beat a path to your door.

      Excellent luck, you sound like you have the drive to make it work!

      Chocolate babka, choc. cloud cake, cupkakes, muffins, coffee cake, lemon meringue pie, choc. mousse.

      That really depends on your expertise.

      Here in SF, we have Boudin bakery which specializes in sourdough and other breads. They also make sandwiches and serve soups (using their fresh breads), beverages.

      There are a chain of Anderson’s Bakery and they specialize in breads too. They also bake specialty breads or rolls, such as cheese, pizza, cranberry nut, apple, etc. They have a place where you can sit down and eat or have coffee or tea or other beverages.

      There are many independent bakeries. Some are really excellent with fancy European type cakes with whipped cream etc. and other pastries. Also they make breads. They have tables where you can buy a cup of coffee and eat, too. This type of bakery is where they get many orders for the holidays.

      Then there are ethnic bakeries. They specialize in meat stuffed breads and pastries, cakes, tarts, etc. Also some Chinese bakeries sell nice sheet cakes with whipped cream & fruit for large gatherings. I reckon they are made with a batter something like a Genoise. (not overly sweet). Those are special ordered.and priced by the size.

      Naturally, we have donut shops too. Some people are hooked on that stuff. If it’s near a school or playground, the children like the cupcakes or cookies with sprinkles on them.

      We patronize all of those. Depends where we are and what we feel like eating on a particular day. San Francisco is a city where you can walk around and there is brilliant public transportation. Sometimes we drive.

      fresh bagels. a wide variety of unusual and usual bagels. it is hard to find excellent ones. you could have the option to make them into a simple sandwich, maybe with a soup of the day, for those who want to stay and eat, and they are fantastic to grab and eat plain. I like bagels, can you tell?

      the seasonal cookie thought is a excellent one too. fantastic for advertising and building a reputation.

      More EXCELLENT sugar-free items (my husband is diabetic) …..cake that isn’t too dry (most cake is) … cakes that have whipped cream or fudge frosting (NOT buttercream) … muffins with crunchy, sugary tops (blueberry & cranberry) … cream puffs & petit fours ….. assorted platters for parties

      Pies that have more meat filling than globby gravy.
      Different breads, like Shabbat bread and real foccacia.
      Gluten free, vegetarian and vegan options.
      A full coloured glossary for ordering celebration cakes.
      Nice coffee and a excellent salad bar.
      Oh and pretty hats for the staff, it’s always a excellent touch.

      You are a very smart young business person, asking for things they like and you might therefore go with the majority.

      We had a bakery next door to us and they had bakery goods you would sware came from heaven.
      Brownies, not too high , nuts chopped up and a nice glaze covering it. 3″ square and price it so.
      Homemade bread,sliced and not,they had a horn roll that the pillsbury dough boy honors.
      Glazed, choco. covered a bit, if you dont place nuts on it you cut down the left overs
      Cake donuts, choco icing a bit.
      Cookies are a must and I have one I made,
      place the oatmeal cookie to shame, go somewhat with it and place the oatmeal in the processor to get it somewhat smooth. Use real butter and pure vanilla or clear im. van.
      I used mini chips , chocolate, van. large pieces of chocolate and chopped nuts. I call it the Kitchen Sink and my 12 grandbabies eat them up as soon as they are done, now I make double and refrigerate the other half.

      Of course you want cakes, and give variety and go a dollar under competition till you get on your feet.
      On Sat. give a coffee clunchers delight.
      have coffee cakes, cherry, apple, peach and cinnamon delight.

      Oh! You know what would be cool? Corn fritters that could be heated on the spot. With real maple syrup warmed very nicely. Mexican pastries would be excellent, too.

      I like giant chocolate chip cookies or oatmeal raisin or persimmon cookies, which are orange. You could have your standard ones & a daily special.

      I like a very simple cinnamon roll, not too sweet & gooey, but more like Grandma used to make. See Tassajara Bread Book. Might be in your library or online, no doubt.

      I’ve made a blackberry bread that’s yummy with clarified butter. Was heroine for the day when I brought that to work warm & ready to eat. It’s in an ancient 70’s cookbook, Cooking in the Orchard, except the recipe says raspberry bread. The batter is purple. Ho, ho. Blackberry Cobbler is in there, too.

      An upscale bakery near me has a sidewalk cafe with chairs both inside & out. They offer several kinds of sandwiches, soup, I reckon, coffee, & several kinds of tea, including herbal. I like the grilled veggie sandwich. It includes a tiny cinnamon roll for dessert. Lunch is about $6 & up….a minor splurge occasionally on my day off. (compared to eating at home)

      They also post a list of the bread of the day for each day. Then they have the usual cookies, cakes, & pastries. The cakes are very expensive but excellent. The ones with almond paste are yummy. So are the fruit tortes, using apricots, peaches, or apples, etc. It’s quite a treat when it’s somebody’s turn to bring refreshments to a staff mtg, & that person brings one of those apricot tortes or a chocolate almond cake or similar from that bakery. (I forgot what that almond paste is called.)

      Oh, I just remembered…there’s a cookbook called California Cuisine or something like that, composed of recipes from restaurants up & down the state. I noticed it in our library & photocopied an apple cake recipe from Cafe Beujalais (sp?) in Mendocino. I like it made with whole wheat pastry flour & with powdered sugar sifted onto the top & served with a small amt of whipped cream. It wouldn’t be a take-out cake, but it would be a down-home thing you could serve right there directly from the long baking dish. Everyone raves about it when I take it to a potluck.

      Are you going to get a Culinary Arts certificate, or do you just like to bake? People like people who like to bake. Or maybe they just like to eat. Delight in!

      all favored cakes, all flavered cookies, all flavored muffins, cheese cake, dugnuts, shakes and malts, coffee, biscits, what pizza has–desert pizza…scones. funnel cakes…elephant ears, pigs in a blanket.. flavored coffee, hot cocco. rasin bread. banana bread, Zucchini bread. try looking in bakery books and visit other bakery shops around town so you know what your up against and so you can add something new to the scence.       Being a diabetic,…If I visited a bakery I would be looking for a highly textured Flax bread or a kind of flat bread loaded with un-ground/whole grains with no sugar added.

      When I reckon “Bakery,” I get a sense that it is a place where things are made more healther and specialized, in comparison to say a groucery store. I reckon “local” and “neibourly,” when I reckon “Bakery.”

      A non-sugar flax bread?…it may not be a top seller but I feel it would be fantastic to have an “optional bread” for diabetics and health nuts.

      Cookies: Chocolate, MNM ones, smarties etc. Huge ones :)

      Cupcakes: rainbow ones different colors. Pleaseing to small kids and me :)

      Cakes with well loved cartoons etc and themes.
      Anythign sugary :p Muffins also and brownies :)

      try chocolate fountains :) make it a williwonka kind of bakery :o
      You could give each kid a free cookie on the house under 10 :D
