My ex was a deli manager at a supermarket. The store's policy for both the deli and the bakery was to take the cost of ingredients and add 60%. So if the pure cost of the carrot cake comes to $10, then add $6. Say you divide it in 8s, then it's $2 a slice. However, if the market in your area warrants it, you can always tack on a bit more to the price. Around here, anything gourmet like that would be at least $3.50-$4 for a slice of carrot cake.

Charging 2-3 times the ingredients plus time sounds about right just make sure you are charging enough to make a profit. Don't forget to factor in the cost of electricity, gas and other things that are considered overhead since you will be using more utilities running your business than when you are doing just your normal cooking and baking.
